Our Sherry vinegar is made with Pedro Ximenez grapes in the Jerez region of Spain using an antiquated process known as the "Solera Method" which is the same process used for balsamic vinegar making. Using this process to slowly ferment the grape juice, the vinegar begins to form from the mother culture of an older batch that it put on the top of the barrels which allows the vinegar to become denser as the years pass. In the beginning the grape juice is much more tangy however, as time passes, the flavors from the barrels begin to infuse with the liquid and give Sherry vinegar the flavor it has today. It is one of Spain's oldest products and frankly, one that has made it onto the food scene there and across the world.

FLAVOR PROFILE: It has a slightly sweet flavor paired with tanginess with notes of molasses and sun-dried raisins. It has a more tangy flavor profile than balsamic vinegar however, it has a wonderful density that can transcend many culinary applications!

USES: Use for marinades, salad dressings, roasting meat/vegetables and even for making soup. We love it for drizzling on potatoes before roasting them with garlic and rosemary!
