4-6 oz. pieces of wild caught salmon, skin removed
3 TBS. our Koroneiki EVOO ( any mild or medium olive oil will be perfect for this!)
5-6 TBS. our Sicilian Pistachio Paste
1 clove of garlic, minced
1-3 TBS chopped nuts, almonds, pistachios or walnuts
- Heat broiler to high. Place the salmon on a foil-lined baking sheet. Add pistachio paste as a thin layer on top of the salmon. Drizzle with the EVOO and season with ½ teaspoon salt and ¼ teaspoon pepper then add garlic on top. Top with nuts and put into the oven!
- Broil until the salmon is opaque throughout, 8 to 10 minutes.
